Dr. Barnard and Chuck also discuss unconfirmed reports that the exotic animal markets in China where the COVID-19 virus is believed to have originated are already reopening after being shut down when the outbreak first began.

Getting 10,000 Black Women To Go Vegan

More than half of all African-American women are obese, according to the CDC. And the solution to stop the unhealthy epidemic is a plant-based diet, according to "The Ageless Vegan" Tracye McQuirter.

The public health nutritionist joins "The Weight Loss Champion" Chuck Carroll to discuss her efforts to inspire the community to get healthy through the 10,000 Black Vegan Women campaign which helps women modify their eating habits.

The pair also discuss social injustices of food in underprivileged communities and why there can be significant disparities in life expectancy even among people who live only blocks apart.

Chuck is then joined by Washington Post columnist, Courtland Milloy, who shares his remarkable story of change.

For his entire life he swore off broccoli. He hated it. Couldn't stand it. Wanted nothing to do with it. His disdain was so great that he even dedicated ink to it in his column.

The problem for Courtland was that the ex-communication of cruciferous vegetables — and many others — was taking a toll on his health. At one time he could barely lift his leg into the car and walked as though he was nearing his 80th birthday. In reality, that particular milestone was still decades away.

Fast forward to today, where Courtland has adopted a plant-based diet and people half his age are having trouble keeping up! He's chronicled his journey to health in his column and now he's sharing it on The Exam Room along with his health Sherpa, Gwyn Whittaker!

It is possible to find relief for hot flashes and menstrual cramps by making simple changes to your diet.

On this episode of The Exam Room Podcast, two women who were pushed to the limit share how they were able to overcome severe hot flashes and unbearable menstrual cramping with food. Plus, "The Weight Loss Champion" Chuck Carroll is joined by Dr. Neal Barnard who explains why certain foods can trigger these conditions and how the hormones that cause them can be tamed at the dinner table.

Ann Friday felt like a prisoner in her heavily layered police uniform when hot flashes would strike. Underneath layers of clothing and a thick bullet proof vest she roasted as the sweltering heat became trapped on her body with no way of escape. She would lose sleep as hot flashes indiscriminately flared up in the middle of the night. The rude awakening jeopardized her focus on the street, presenting a potentially dangerous situation. Having tried everything, she finally found a way to cool off and calm the hot flashes by making one big change.

Lindsay Nixon would be doubled over in crippling pain every month when. The cramps were so severe that she was unable to leave her home. Often she begged her roommate to stand on her belly or would fold herself over the back of the couch thinking that the pressure would bring relief. She also began taking prescription pain killers and considered having a hysterectomy at a young age. The decision would have taken away her ability to have children, but all she could think about was putting an end to her agony. Finally, she found that food was the answer. Today she is living pain free and famously known as The Happy Herbivore.

Lindsay also created the recipes from Dr. Barnard's book Your Body In Balance! She and Chuck go over her amazing recipe for Mediterranean Croquettes and Bayou Quinoa from Day 2 of the book's 14-day menu.

Jeanne Schumacher is a chemistry teacher who also began packing on pounds, but instead of having a jolt of energy, she felt sluggish and was sick all the time. She had become a frequent flyer in the doctor's office. Her turning point came when she was rushed to the hospital with a 105-degree fever and sky-high blood pressure.

Although they lead much different lives, they do have one thing in common, each are now living vibrantly and healthfully following a closer examination of the foods they were eating.

3.) The year also saw renewed scrutiny of dairy. It's been said for decades that milk does a body good, but newly released studies have shown that its effects are doing far more harm than help. Oncology dietitian Alison Tierney joined the show to present data showing rather than promoting healthy teeth and strong bones, the proteins and fat in dairy are actually promoting cancer!

Could eating a vegan diet be the key to treating Crohn's Disease? Quite possibly.

On this episode of The Exam Room™ podcast, "The Weight Loss Champion" Chuck Carroll is joined by Dr. Hana Kahleova who shares a case study of a medical school student who was able to put his Crohn's Disease into remission by adopting a plant-based diet. Even with traditional medical treatments the student was still struggling until he made dietary adjustments.

Dr. Kahleova and Chuck explore why his case may not be an anomaly and the nutrition science of why eliminating meat and dairy from the diet may the millions of others worldwide living with Crohn's.

Chuck is also joined by entrepreneur Gregg Rozeboom who was inspired to open a chain of plant-based restaurants that were both healthy and eco-friendly. Gregg simply wanted for there to be a place where he could feel good about the food that was being served. Thus, Fruitive was born.

Gregg's journey to open Fruitive and adopt a plant-based diet is also part of his own health journey. He suffered from frequent and intense migraine headaches. At the suggestion of his wife, he began logging a food journal. As it turns out, Gregg discovered that the fast food and processed food he had been eating was also triggering these crippling episodes. Without that food in his diet, the migraines have subsided greatly!

A major push is underway to end lab testing on dogs by pharmaceutical companies.

On this bonus episode of The Exam Room™, "The Weight Loss Champion" Chuck Carroll is joined by Elizabeth Baker, pharmaceutical policy program director for the Physicians Committee, who shares the incredible story of Vanda Pharmaceuticals. The biopharmaceutical company is working to end animal testing even at the expense of their bottom line.

As you'll hear, Vanda was ordered by the FDA to test a potential new drug for a stomach disorder on dogs. However, the company's researchers concluded that the study would not be useful and cause unnecessary animal suffering. Vanda then asked FDA not to require the dog study, which would have taken place after the drug was already being tested in humans.

But the FDA pushed back and barred Vanda from continuing with any further trials. Now, Vanda is fighting back!

Baker also discusses the modern non-animal testing methods that are faster and more cost-effective in bringing drugs to market.

Every October it seems as though everything is awash in pink in honor of breast cancer awareness. However, Dr. Barnard explains that sometimes these well-intentioned efforts badly miss the mark.

Remember when KFC had a pink bucket of chicken? What about the airline selling a pink martini to raise funds for breast cancer research? More recently, a sausage company announced plans for a "cure campaign."

The problem is that all of these products have been shown to increase the risk of developing cancer and some have been classified directly as being carcinogenic to humans. It's like selling a pack of cigarettes to raise money for lung cancer research.

Dr. Barnard ponders a new way to think pink, one that stresses prevention rather than treatment!

Dr. Kristi Funk then joins Chuck to discuss the first of four steps outlined in the Let's Beat Breast Cancer campaign — eating a plant-based diet!

Farro with Miso Mushrooms, Kale and Walnuts

(Vegan, Oil Free)

Serves 4

-- Ingredients --

- 2 ½ cups vegetable stock (divided)

- ½ tsp salt

- 1 bay leaf

- 1 cup uncooked pearled farro

- 5 cups sliced cremini mushrooms

- 6 cups chopped kale

- 3 cloves garlic, minced

- 1 Tbsp tamari

- 1 tsp white miso

- 1 Tbsp nutritional yeast

- 1 Tbsp fresh lemon juice

- 1/3 cup chopped toasted walnuts

- 1/8 tsp ground black pepper

-- Instructions --

1.) In a medium pot, add 2 cups vegetable stock, salt, bay leaf, and farro. Bring to a boil, then immediately reduce heat to low and simmer, covered, for 20-25 minutes, or until farro is tender and liquid is absorbed. Remove from heat and fluff with a fork.

2.) While farro is cooking, in a large saucepan, heat ¼ cup of vegetable stock over medium high heat. Add mushrooms and cook, stirring occasionally, for 5 minutes, or until tender. Add kale, garlic, tamari, miso, nutritional yeast, and remaining ¼ cup of vegetable stock – stir to combine. Reduce heat to medium and cook an additional 3-4 minutes, or until kale is wilted and tender.

3.) Add cooked farro to mushroom and kale mixture. Add in lemon juice, toasted walnuts, and black pepper; stir until combined. Serve hot, or at room temperature.
