Eating a whole-food plant-based diet is a critical part of Bruce's plan and he credits it immensely for helping him throughout the treatment process. He says he was able to nullify many of the side effects of the surgeries, radiation and hormone therapies because of his diet.

Then he found another doctor who gave him two more prescriptions that would save his life: adopt a plant-based diet and a dog. Both he and the dog slimmed down and Eric is no longer on any medication.

Chuck welcomes Eric back to the show to talk about his extraordinary accomplishment and for the first time they are joined by the doctor whom he credits with saving his life, Dr. Preeti Kulkarni! Researchers have known for years that red meat is anything but a health food. Dozens of studies have shown that eating it increases the risk of multiple forms of cancer and heart disease. Now, Dr. Joel Kahn joins "The Weight Loss Champion" Chuck Carroll on The Exam Room™ with three NEW reasons not to eat red meat, some of which might surprise you!

Also on the show, does a McDonald's hamburger or a veggie burger have a bigger impact on diabetes? Dr. Hana Kahleova had 20 men chow down in the name of science to find out. She joins Chuck to go over some eye opening results!

Then we unveil The Exam Room Burger! It's a smoky black bean quinoa burger created exclusively for the show by the ultra-talented vegan chef Lauren Kretzer! This is a recipe you're not going to want to miss!

The Exam Room Burger

vegan, gluten free, oil free

Serves 6

Ingredients:

  • 1 (15.5 oz) can black beans, drained and rinsed
  • ½ cup cooked quinoa
  • ½ cup walnuts
  • ½ cup roughly chopped fresh cilantro
  • ¼ cup oat flour
  • 1 clove garlic
  • 2 Tbsp tahini
  • 1 Tbsp tomato paste
  • 1 Tbsp tamari
  • ½ tsp salt
  • ¼ tsp chili powder
  • ¼ tsp smoked paprika
  • Whole wheat hamburger buns, sliced avocado, and sprouts, for serving (optional)

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or a Silicone baking mat (such as Silpat).
  2. In the bowl of a food processor fitted with an "S" blade, add black beans, quinoa, walnuts, cilantro, oat flour, garlic, tahini, tomato paste, tamari, salt, chili powder and paprika. Process until ingredients are just combined; mixture should have some texture, but should hold together.
  3. Transfer burger mixture to a cutting board and divide evenly into 6 patties (about 3-3 ½" in diameter).
  4. Place burger patties on lined baking sheet and cook for 18-20 minutes, turning halfway.
  5. Serve burgers on hamburger buns with avocado and sprouts (and/or any other desired toppings).

Is the paleo diet healthy? Supporters claim that by eating the way our ancestors did more than 10,000 years ago you will lose weight and get healthy. It's a diet free of most grains, beans, legumes and potatoes since those foods weren't available during the paleolithic era. However, there is evidence to suggest certain grains and tubers were in fact part of the Neanderthal diet.

Without those starches, a typical paleo menu relies heavily on grass-fed lean meat, fish, eggs, and oil. Nuts, fruit and vegetables are also permitted.

The current generation of children will not live longer than their parents if the current skyrocketing obesity trend continues. One out of every five children are now obese, according to the latest statistics, while millions of others are overweight and not far behind. As those numbers continue to rise, so too will the number of children facing illnesses once thought to be reserved only for adults — heart disease, type 2 diabetes and more.

On this episode of The Exam Room™, "The Weight Loss Champion" Chuck Carroll talks about his own struggle with childhood obesity. Doctors put him on blood pressure medication when he was only 15 years old because of his poor eating habits!

Dietician Maggie Neola then joins the show to update us on some extraordinary efforts to prevent other children from suffering the same fate. A number of states are considering legislation that would require schools to offer plant-based lunch options, including New York and California. She and Chuck also talk about how you can get involved and help push legislation through that would make healthy lunches the law of the land.

New York residents can send their representatives a letter urging them to support proposals S1472 and A1624 that would bring plant-based food to schools statewide.

Ever resilient and unwilling to die, Courtney began the painstaking process of investigating her condition and searching for a cure. Eventually, she stumbled upon research on the benefits of a plant-based diet, including some conducted by The Physicians Committee. Following years of frustrating battles and a near-death experience, the pieces of the puzzle started coming together and her fortunes began to turn around once she changed her eating habits.

Since all oils are high in fat (1 gram of fat has nine calories) can be a problem for those trying to lose weight and maintain their overall health. Research also shows oil poses a significant risk to diabetics as it interferes with insulin's ability to move glucose into the cells.

So, how can you cook without it?! "The Weight Loss Champion" Chuck Carroll and welcomes plant-based chef Dreena Burton to the show for a lesson. Dreena has collaborated with Dr. Neal Barnard on a number of projects, including his Cookbook For Reversing Diabetes.

Plus, in honor of Breast Cancer Awareness Month, Chuck revisits an interview with dietician Lee Crosby, R.D., L.D. from an episode titled The Meat-Cancer Connection.

For Lee Crosby, R.D., L.D., the connection between meat and cancer hits close to home. The Barnard Medical Center dietician shares her own story of finding a lump in her breast at a young age and turning to a plant-based diet as a result. Following the dietary changes the mass showed no signs of growth. As time passed, she reverted back to the standard American diet only to have the lump quickly grow. The mass was then removed and now she's now devoted 100 percent to a plant-based diet. The lump has not returned.

Lee will also share her delicious top 5 healthy meat substitutes.
